White pepper is the fully ripe fruit of the flowering vine. This ripe fruit is kept in water and then its skin is removed to get the white texture.
White pepper is picked when it is fully ripe from the flowering vines. The ripe pepper berries are then left in water for at least ten days. Leaving the ripe pepper in water leads to fermentation. The production of white pepper requires a little more hard work. The skin of the soaked ripe berries is removed from them. Removing the skin also removes some amount of chemical compound, piperine. The white pepper thus is not as spicy as black pepper. It also has a very light aroma and flavor.
White pepper is mostly used in dishes which are wholly white. Black pepper when sprinkled in such dishes stands out, so to provide a rich look white pepper powder or whole is sprinkled on them. The white pepper easily gets mixed with the dish and provides a rich taste and aroma.
